CRUNCHY ASIAN SALAD


This crunchy salad is sooo moreish with this dressing, you cannot stop eating it! It is very refreshing and goes well with many dishes. You can add other crunchy vegetables if you want. For example radishes, lemon balm leaves or alfalfa sprouts. You will eat it over and over again!! 

INGREDIENTS:
1 lebanese cucumber, seeded and thinly sliced into small batons
1/2 lettuce, shredded
2 spring onions, thinly sliced
1 large handful of both mint leaves and coriander
10 snow peas, finely sliced
1/4 cup fried Asian shallots
1/4 cup ground roasted peanuts
4 radishes (optional)
a handful of alfalfa sprouts (optional)
some other herbs such as Vietnamese mint, lemon balm leaves...

Dressing
1 Tbsp shaved palm sugar
100 ml tamarind water
2 Tbsp kecap manis
1 Tbsp balsamic vinegar
1 garlic clove, crushed
1 red chilli, seeded and finely chopped

METHOD: 
To make the salad, combine all greens in a big platter.


To make the dressing, combine the palm sugar, tamarind water, kecap manis and balsamic vinegar in a small bowl. Add the red chilli and garlic. Mix well.


Spoon over the salad or serve it in a bowl next to it.
